GRAPEFRUIT JELLY 
2 1/4 c. grapefruit juice with 3/4 c. water added or 3 c. grapefruit juice
1 pkg. (2 oz.) powdered fruit pectin
3 1/2 c. sugar

In a large kettle or saucepan, combine juice and pectin; stir over high heat until mixture comes to a hard boil. Stir in sugar. Bring mixture to a full rolling boil. Boil hard for 1 minute, stirring constantly. Remove from heat; skim any foam from surface. Pour immediately into sterilized jars. Cover with paraffin. Makes 2 1/2 pints.
