WEIGHT WATCHERS FRUIT SNACK MUFFINS | |
1 c. plus 2 tbsp. apple juice 3 pkg. Weight Watchers apple snacks 1 3/4 c. flour 2 tbsp. brown sugar 2 tbsp. sugar 2 tsp. double-acting baking powder 1/2 tsp. baking soda 1/4 tsp. cinnamon 1/4 tsp. nutmeg 1/4 c. vegetable oil 1 egg 1/2 tsp. vanilla Combine juice and apple snacks. Let stand 10 minutes. In a separate bowl sift dry ingredients together. In another bowl, beat oil, egg, vanilla and add to apple mixture. Stir until lumpy. Fill 12 paper-lined cups. Bake 15-20 minutes at 375 degrees. (1 muffin = 1/2 B, 1/2 Fr, 1 Fa, 40 O.C.) |
