CHICKEN QUESADILLA 
1 chicken breast
humus dip (preferably garlic or sweet bell pepper)
tortilla shells
cheddar cheese

Lay the tortilla shell on a flat surface and layer with humus dip over whole shell. Place some shredded cheese on half of the tortilla shell, then place pieces of chicken throughout that half that also has the cheese.

Then layer some more cheese over top and fold the other half of the tortilla shell over top of the chicken and cheese.

Best fried, basically you want to melt the cheese and toast the tortilla shell a little. Can be served with some sour cream and salsa.
