ELEGANT BUT EASY PINEAPPLE BARS 
CRUST:

1 c. flour
1/2 c. sugar
1/2 c. butter

Preheat oven to 350 degrees. Combine flour and 1/2 cup sugar. Blend with fork. Cut in 1/2 cup butter until crumbly. Press into bottom of ungreased 9-inch square pan. Bake at 350 degrees for 10 minutes. Set aside.

FILLING:

8 oz. softened cream cheese
2 tbsp. sugar
2 tbsp. milk
1 tsp. vanilla
1 egg
8 oz. can crushed pineapple, well drained
1 c. coconut
1/2 c. almonds or macadamia nuts
1 tbsp. melted butter

Combine cream cheese, sugar, milk, vanilla and egg. Beat until smooth. Stir in pineapple; spread over partially baked crust. In separate bowl combine coconut, nuts, and 1 tablespoon melted butter. Sprinkle over pineapple mixture. Return to oven and bake 18-20 minutes or until coconut is golden brown and filling appears set. Cool completely.

GLAZE:

1/2 c. confectioners sugar
3 tsp. milk
1/4 tsp. vanilla

Combine confectioners sugar, milk and vanilla. Drizzle over bars. Cool in refrigerator until served. Slice into bars and serve.
