EASY PINEAPPLE PIE 
1 pkg. vanilla instant pudding (3 3/4 oz.), use it dry
1 (9 oz.) carton non-dairy whip topping
1 (No. 2) can crushed pineapple, unsweetened & undrained

In bowl empty pudding mix. Add topping and stir until the pudding seems to dissolve into the whipped topping. Blend in the undrained pineapple. Spoon it into a graham cracker crust; top with crumbs, if desired. Let it get well chilled and set before serving.

This recipe was very tasty but did not fill the prepared crumb crust adequately. I used a prepared cookie crumb crust, one 3.4 oz. lemon instant pudding and one 3.4 oz. cheesecake instant pudding along with the 20 oz. undrained crushed pineapple and one 8 oz. light sour cream. A couple of whipped cream dollops at serving time and it was delightful especially after a heavy meal of lasagna or beef roast, etc.
