SWEET POTATO CHEDDAR CHEESE
FRITTERS
 
1/4 c. grated sweet potatoes or yams
1/2 c. flour
2 tbsp. salad oil
1 tsp. salt
1 tbsp. sugar (optional)
1/4 c. tightly packed grated extra sharp yellow Cheddar cheese
1 egg, beaten
3 tbsp. milk
Oil for deep frying fat

Combine all ingredients except oil for frying. Mix together well. Drop by tablespoons into hot fat 375 degrees and fry until golden on all sides. Keep warm in low oven until all fritters are made. Can be served plain or with guava jelly. Makes about 1 dozen.
