ZITI WITH CHICKEN AND TOMATO
SAUCE
 
2 tbsp. vegetable oil
1/2 c. thin sliced scallions
1 clove garlic, crushed
4 c. thin sliced mushrooms (8 oz.)
4 oz. sliced cooked ham, cut into julienne strips, about 1 c.
1 (28 oz.) can crushed tomatoes in puree
1 tsp. salt
3/4 tsp. dried oregano
1/2 tsp. freshly ground pepper
2 cooked chicken cutlets, cut into julienne strips
1/2 (16 oz.) pkg. ziti pasta
2 tbsp. chopped parsley, optional
Shredded Parmesan cheese, optional

In large skillet heat oil over medium heat. Add scallions and garlic. Cook, stirring constantly, about 3 minutes, until scallions are soft. Add mushrooms and ham. Cook, stirring constantly, until mushrooms are slightly tender, about 4-5 minutes. Stir in tomatoes, salt, oregano and pepper.

Add chicken; reduce heat to low; cover and simmer 5 minutes. Cook ziti according to package directions. Drain in colander; place in large heated serving bowl. Toss with sauce. Sprinkle Parmesan cheese if desired. Serves 4.
