MEATY MANICOTTI 
1 lb. lean ground beef
1/4 c. chopped onion
1 clove garlic, mashed
1 (10 oz.) chopped spinach, drained
1/2 c. cottage cheese
2 eggs, lightly beaten
Salt and pepper to taste
12 cooked manicotti shells
15 1/2 oz. spaghetti sauce with mushrooms
1/2 c. grated Parmesan cheese
1 c. (4 oz.) shredded Mozzarella cheese

Lightly grease 13 x 9 baking pan, set aside. Brown ground beef in skillet over medium heat. Add onion and garlic. Saute 3 to 4 minutes until onion is tender. Drain off excess fat. Remove from heat and add spinach, cottage cheese, eggs, salt and pepper. Stir until well mixed. Fill each shell with 1/4 cup meat mixture. Place filled shells in prepared baking pan. Pour spaghetti sauce evenly over filled shells. Sprinkle Parmesan, then Mozzarella cheese over sauce. Bake 30 minutes at 350 degrees.
