CONGEALED SPINACH SALAD 
1 (3 oz.) pkg. lemon or lime Jello
1 c. ginger ale (hot) or 7-up
1/2 c. diced onion
1 c. diced celery
1 c. real mayonnaise (not salad dressing)
1 pkg. chopped frozen spinach (cook & drain)
2 tsp. lemon juice
1 c. cottage cheese, sm. curd

Dissolve Jello in the hot ginger ale. Add the drained spinach and all the other ingredients. Mix well. Pour in casserole dish and cool for 3-4 hours.
