SINGLE SERVING CREAM CHEESE PIES 
2 pkg. (8 oz. each) cream cheese, softened
2 eggs
1 tsp. vanilla
1 tbsp. lemon juice
3/4 c. sugar
1 pkg. vanilla wafers
2 cans cherry pie filling
36 cupcake papers

Mix eggs, cream cheese, vanilla, lemon juice and sugar until smooth. Put 1 vanilla wafer in each cupcake paper. Spoon mixture over each vanilla wafer, filling only 1/2 full. Bake for 12-15 minutes per pan at 350 degrees. They should not feel mushy when you remove from oven. Cool in refrigerator until ready to use. Remove individual pies from pans and arrange on tray. Spoon cherry pie filling on top of each and serve. Refrigerate leftovers (if there are any!).
