CARROT CAKE (THE BEST!) 
1 1/2 c. salad oil
3 eggs
2 c. sugar
2 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
1 c. chopped nuts
1 c. grated carrots
1 c. crushed pineapple, drained
1 c. coconut

Beat oil, eggs and sugar well. Add flour, soda, salt and cinnamon. Beat well. Add vanilla, nuts, carrots pineapple and coconut. Bake in a greased 13 x 9 inch pan at 350 degrees for 40 - 50 minutes.

FROSTING:

1 stick butter
8 oz. cream cheese
1 box confectioners sugar
2 tsp. vanilla

Blend butter and cream cheese; add sugar and vanilla. Mix well.
