MARINATED TOMATO AND CHEESE | |
2 lg. ripe tomatoes Fresh basil leaves 8 oz. low moisture Mozzarella Crushed garlic Salt and pepper Wine vinegar Oregano Parsley for garnish About 6 hours before serving, slice Mozzarella into 1/8 inch slices. Tear basil into tiny pieces. Place all ingredients but tomatoes, in covered platter or casserole. When ready to serve, slice tomatoes 1/4 inch thick. Place alternately on platter or tray tomato, cheese, tomato wreath-like overlapping slices. Pour on marinade. Garnish. |
