BANANA NUT BREAD 
1/4 c. shortening
3/4 c. sugar
2 eggs
2 c. Jiffy baking mix
1 c. mashed ripe bananas (2-3 med.)
1/3 c. chopped nuts (optional)

Heat oven to 350 degrees. Grease a 9x5 inch loaf pan. Cream shortening and sugar. Combine remaining ingredients, and mix until well blended. Pour into prepared pan. Bake 55 to 60 minutes. Cool on rack before slicing.
