ERIN'S FAVORITE VEGGIE CASSEROLE 
Preheat glass dish with 1 tablespoon butter. Have 3 cups slightly steamed veggies (broccoli, mushrooms, carrots, squash) ready.

Batter: Beat 2 eggs with mixer. Add 1 cup milk and 1 cup sifted flour. Add 1/2 teaspoon Italian seasoning and 1/2 teaspoon salt. Pour batter into warmed dish (12 inch round). Add veggies in the middle. Sprinkle with pepper and 4 ounce grated Monterey Jack cheese. Bake at 375 degrees for 30 minutes or until done in center.
