PLANTATION PEACH SHORTCAKE 
peaches (about 8 cups)
2 cups all-purpose flour
1/2 tsp. salt
3 tsp. baking powder
1/4 cup brown sugar
1/2 cup shortening
1/2 cup chopped pecans
1 egg
2/3 cup light cream

First, cut up sweetened peaches, about 8 cups. Sift dry ingredients; cut in brown sugar and shortening until mixture resembles coarse meal. Add pecans. Combine egg and cream. Add to flour shortening mixture. Mix until all flour is moist. Spread dough in 2 greased round layer cake pans.

Bake at 450°F for 10 to 12 minutes. Place peaches between layers. Top with whipped cream.
