MUSHROOMS IN SOUR CREAM SALADS 
1 1/4 lb. quartered mushrooms
Juice of 1/2 lemon
Salt and pepper
1 med. sliced onion
1 tbsp. white vinegar
1/2 tsp. sugar
1 c. sour cream
1/4 tsp. Tabasco
2 tbsp. Dijon mustard
Paprika

Mix together mushrooms with lemon juice, salt and pepper to taste. Boil 4 minutes. Drain and cool. Pour boiling water over onion and drain. Mix with vinegar and sugar. Set aside. When mushrooms have cooled, mix with sour cream, Tabasco and mustard. Stir in onions. Serve on bed of lettuce and dust with paprika. Can be prepared well in advance of dinner.
