BEEF AND RICE FLORENTINE 
3/4 lb. ground beef
1 tbsp. oil
1 tbsp. finely diced onion
1 pkg. (10 oz.) Birds Eye chopped spinach
1 c. water
1 med. tomato, diced
1 tsp. salt
1 tsp. oregano
1 1/2 c. dry Minute Rice
1 tbsp. grated Parmesan cheese

1. Brown beef and onion in oil, leaving in bite size chunks.

2. Push meat mixture to side of pan and add spinach, water, tomato, salt and oregano. Break up spinach and bring to a boil.

3. Stir in rice, cover, remove from heat and let stand 5 minutes. Sprinkle with cheese and serve. Makes 4 servings.
