BROCCOLI MUFFINS | |
1 (7 oz.) box sweet cornbread mix 1 (10 oz.) pkg. frozen chopped broccoli, thawed 1/2 c. butter, melted 4 eggs 1 lg. onion, chopped 1 tsp. salt 1 1/2 c. cottage cheese Combine all ingredients and mix well. Pour into 12 greased muffin cups. Bake at 425 degrees for 25 minutes. Yield: 12 servings. Wonderful way to serve broccoli. |
