CRANBERRY OATMEAL COOKIES 
2/3 c. butter, softened
2/3 c. brown sugar
2 large eggs
1 tsp. vanilla flavoring
1 1/2 c. old-fashioned oats
1 1/2 c. plain flour
1 tsp. baking soda
1/2 tsp. salt
1 c. dried cranberries
1 c. white chocolate chips or chunks

Preheat oven to 375°F. Beat butter and sugar until fluffy. Add egg and mix well.

Combine oats, flour, salt and soda in a separate bowl. Add to butter mixture 1 cup at a time. Mix well. Stir in cranberries and white chocolate chunks. Drop by teaspoonfuls on ungreased cookie sheets.

Bake for 12 to 15 minutes or until golden brown.

Makes about 3 dozen cookies.

Note: You can use the same recipe omitting cranberries and adding 1 cup of chopped pecans and 1 cup coconut.
