BAKED CORN WITH CHEESE TOPPING 
2 cans (16 oz. each) kernel corn
1 bunch green onions, sliced
2 tbsp. butter
1 to 2 tbsp. brown sugar
1 tbsp. Dijon mustard
Dash of black pepper
1 c. sour cream
1/2 c. grated cheddar cheese
2 tbsp. grated Parmesan cheese

Drain corn. Place in shallow 9 inch baking dish. Saute onion in butter until soft. Scatter onions over corn. Sprinkle with brown sugar. In small bowl combine sour cream, mustard, black pepper and cheddar cheese. Spoon mixture over corn and onion. Sprinkle with cheese. Bake covered at 375 degrees for about 20 minutes. Uncover, bake 10 to 15 minutes longer until cheese is melted and top is slightly browned.
