1 egg, lightly beaten
2 c. Jiffy baking mix
3 tbsp. oil
1 1/3 c. club soda

Whip together and pour onto hot iron. Bake until golden. Excellent with fresh berries, cool whipped cream and Vermont maple syrup (but, I bet NY will do!).
