PEAS AND PROSCIUTTO, TUSCAN
STYLE
 
2 tbsp. olive oil
1 c. chopped onion
1 tsp. minced fresh garlic
2 oz. prosciutto, diced
1 (10 oz.) pkg. frozen green peas
1/4 c. chicken broth
1/2 tsp. pepper
2 tbsp. chopped fresh parsley

In a heavy 10 inch skillet, heat oil over moderate heat. Add onion and garlic and cook 3-5 minutes, stirring occasionally until translucent. Stir in prosciutto and cook 1-2 minutes until color changes. Stir in peas, broth and pepper. Cover and simmer 3-4 minutes until peas are tender. Stir in parsley. This makes a good accompaniment to any Italian food (meat, chicken, or pasta).
