COBB SALAD 
1 c. cubed, cooked chicken breast
2 hard cooked eggs, chopped
6 slices crisp cooked bacon, crumbled
2 c. head lettuce, torn in bite size pieces
2 c. spinach leaves, torn into bite size pieces
2 chopped fresh tomatoes
2 green onions, including tops, sliced
1 ripe avocado, peeled, pitted & cubed
1 tsp. lemon juice
1/2 c. (2 oz.) shredded sharp cheddar cheese
1 oz. crumbled blue cheese

DRESSING:

4 tbsp. oil
3 tbsp. wine vinegar
1/4 tsp. grated onion
3/4 tsp. sugar
1/2 tsp. chopped fresh basil
1/4 tsp. chopped fresh thyme
Pinch of dry mustard
1 tbsp. chopped parsley

Or 1/4 teaspoon hand crushed dried basil leaves.

Or 1/2 teaspoon hand crushed dried thyme leaves.

Combine all salad dressing ingredients; chill.

Combine all ingredients with dressing and rub lightly so it is well coated. Yield: 8
