S.'S CLAM CHOWDER 
2 (8 oz.) cans minced clams
2 inch square salt pork
6 to 8 pilot crackers
Boiling water as needed
2 lg. onions, sliced
4 med. potatoes, sliced thin
Chunk of butter
Salt
Pepper

Brown onions with salt pork. Build up layers of fried pork, onions, clams, potatoes, crackers than have been crushed. Repeat layers until all is used. Add boiling water until whole mixture floats.

Cook slowly, stir often. Add boiling water as needed. Cook at least 3 hours. Add liquor from clams, chunk of butter, salt, pepper to taste. Set away in refrigerator until next day. Chowder may be thinned with water or milk or tomatoes. Will keep refrigerated month in glass jars.
