BANANA NUT BREAD 
2 c. sugar
1 c. oil
4 eggs
2 tsp. vanilla
3 c. mashed ripe bananas (6 to 7)
4 c. flour
2 tsp. baking soda
1 tsp. salt
1/4 tsp. each cinnamon and nutmeg
1 1/2 c. chopped pecans or walnuts

In large bowl, mix sugar, oil and eggs with wooden spoon. Add vanilla and bananas. Separately, stir together remaining ingredients then add to banana mixture. Bake in 2 greased and floured loaf pans at 300 degrees for 1 hour and 15 minutes. Cool on rack before slicing. Makes 2 loaves.
