LOW - CAL CHILLED ALMOND SOUFFLE 
2 1/4 c. water
2 env. unflavored gelatin
1 pkg. (8 oz.) softened cream cheese
18 pkg. Equal low-cal sweetener
1 1/2 tsp. almond extract
1/2 c. dry Carnation non-fat dry milk
1/2 c. ice water
2 tbsp. lemon juice
Fresh fruit
Chocolate shavings

Combine 2 1/4 cups water and gelatin in small saucepan; let stand 1 minute. Cook over low heat until gelatin is dissolved. Beat cream cheese in large bowl. Gradually add gelatin mixture; beat until blended. Stir in Equal and almond extract. Chill until mixture mounds on a spoon. Beat with a wire whip if necessary to smooth. Combine non-fat dry milk, 1/2 cup ice water and lemon juice in small bowl. Beat on high speed until stiff peaks form, about 6 minutes. Fold into gelatin mixture.

Spoon into individual molds, or souffle dish. Serve garnished with fresh fruit and chocolate shavings. Makes approximately 6 cups. 92 calories per 1/2 cup serving.
