CHICKEN DIANE 
2 tbsp. plus 2 tsp. butter
1 1/4 lbs. chicken cutlets
1/2 c. minced onion
1/4 c. parsley
2 tbsp. plus 2 tsp. A-1 steak sauce
2 tbsp. plus 2 tsp. cooking sherry
2 tsp. Worcestershire sauce
2 tsp. dijon mustard

Take 1 tablespoon plus 1 teaspoon butter and fry chicken cutlets until done. Remove chicken from pan and add 1 tablespoon plus 1 teaspoon butter and add onions and saute until opaque. Add rest of ingredients and cook on low for 5 minutes. Place chicken cutlets in pan with sauce and coat on all sides.
