1 lb. ground beef
1 c. course cracker crumbs
1/3 c. chopped onion
1/2 c. milk
1 egg
1/2 c. ketchup
1 tsp. Worcestershire sauce
1 tsp. salt
1/4 tsp. pepper
1 c. grated Cheddar cheese

In large mixing bowl, combine ground beef, 1/2 cup cracker crumbs, onion, milk, egg, 1/4 cup ketchup, Worcestershire sauce, salt and pepper. Blend thoroughly. Place mixture on large piece of waxed paper. Cover with another piece of waxed paper and roll out to about 9 x 15 inches. Remove top sheet of paper, combine remaining cracker crumbs and cheese. Sprinkle over meat mixture. Beginning with 9 inch side, roll up jelly roll fashion, using waxed paper to help roll. Place in 9 x 5 inch loaf pan. Spread remaining 1/4 cup ketchup over top. Bake in preheated 350 degree oven for 45 to 50 minutes. Yield 5 to 6 servings.
