PORK FRIED RICE 
2 tbsp. oil
1/4 c. thinly sliced scallions
1/4 c. snow peas
1 c. shredded lettuce
1 c. diced cooked pork
1 egg, beaten
4 c. cooked rice
Soy sauce
1 tbsp. dry sherry

Heat oil in skillet. Add scallions, snow peas, lettuce, and pork. Stir fry 1-2 minutes. Add egg and cook until scrambled. Add egg and cook until scrambled. Add rice, soy sauce, and sherry. Stir fry 2-3 minutes. Serve immediately.
