LEMON CHEESECAKE 
1 lg. size pkg. lemon Jello
1 c. boiling water
3 tbsp. lemon juice
1 (8 oz.) pkg. cream cheese
1 c. sugar
1 tsp. vanilla
1 tall can evaporated milk

Mix first 3 ingredients together and place in refrigerator until syrupy. Mix cream cheese, sugar, and vanilla. Whip milk, then whip Jello; add cream cheese mixture and pour into whipped milk mixture. Pour into graham cracker or cereal crust.
