BAKED FISH WITH CHEESE SAUCE 
1/4 c. butter
1/4 c. flour
2 tsp. dry mustard
2 c. milk
1 tsp. salt
1/4 tsp. pepper
1 c. grated cheese (American or other)
2 lbs. haddock fillets

Make a sauce of butter, flour, mustard, milk, salt and pepper in the top part of a double boiler. Add the grated cheese and stir until blended. Pour over uncooked haddock fillets in a buttered baking dish. Bake at 350 degrees for 25 to 30 minutes.
