CARROT SNACK CAKE | |
1 1/2 c. all-purpose flour 1 c. sugar 1 1/2 tsp. baking powder 1 tsp. salt 2 tsp. cinnamon 3/4 c. cooking oil 2 eggs 2 tsp. vanilla 1 c. grated carrots 1 c. chopped nuts 1/2 c. raisins Lightly spoon flour into measuring cup. Level. Measure ingredients (the first 8) into large mixing bowl. Blend 1 minute at low speed, 2 minutes at medium speed. Stir in carrots, nuts and raisins. Pour into greased pan. Bake at 325 degrees for 40-45 minutes. Sprinkle with powdered sugar or top with whipped cream and a drizzle of honey, as desired. |
