PEAR MINCEMEAT 
18 firm cooking pears, ground
Juice and rind of 3 lemons
2 boxes raisins
2 whole oranges, ground
2 c. dark molasses
2 c. sugar
2 c. cider vinegar
1 tbsp. salt
2 c. apple cider
4 tsp. ground cloves
4 tsp. cinnamon
4 tsp. allspice
4 tsp. nutmeg
6 c. peeled apples, chopped
6 c. brown sugar, firmly packed

Combine all ingredients in a large kettle. Bring to a boil; reduce heat. Simmer, uncovered, for 1 hour and 30 minutes or until pears become transparent; stir frequently. Pack in sterilized jars; adjust caps. Process in simmering water bath for 30 minutes. Yield: 6 to 7 quarts.
