MOCK APPLE PIE 
1 c. sugar
1 tsp. cinnamon
1/4 tsp. allspice
4 c. zucchini for a 9-inch pie
1 pinch salt
1/4 c. brown sugar
1/4 tsp. nutmeg
1 1/2 tsp. cream of tartar
2 tbsp. flour or cornstarch

Peel and deseed zucchini. Slice like you would an apple. Cover with boiling water and boil 2 minutes. Drain and set aside to cool. Mix all ingredients together and stir gently through cooled zucchini. Put into unbaked 9-inch crust.

Cover with crust and bake at 400 degrees for 10 minutes, then at 350 degrees for 25 minutes or until brown. The deeper the pie tin the less boil over.
