APPLE BUTTER AND CORIANDER
STREUSEL CAKE
 
1/2 c. unsalted butter
1 c. apple butter
1 egg
1 tsp. vanilla
1 1/2 c. unbleached flour
1 tsp. baking soda
1 tsp. ground coriander
1/2 tsp. salt
1/2 c. raisins

STREUSEL:

1/3 c. unsalted butter
1/3 c. sugar
1/3 c. dark brown sugar
1/3 c. unbleached flour
3/4 c. chopped pecans or walnuts (use more if desired)

Preheat oven to 350°F.

Grease and flour a 9x9-inch pan or a small Bundt pan.

To prepare cake: In a large saucepan, melt butter over low heat. Remove from heat. Stir in apple butter, egg, and vanilla. Combine flour, baking soda, coriander, and salt; gradually beat dry ingredients into the egg mixture. Stir in the raisins. Pour the batter into prepared pan and bake for about 45 minutes, or until a top of cake is browned along edges and a cake tester inserted in center comes out clean.
