MOCHA PECAN BALLS | |
1/2 c. butter 2 3/4 c. confectioners' sugar 1 tbsp. instant coffee powder 1/4 c. boiling water 1/4 tsp. salt 2 c. quick oats 1 (6 oz.) pkg. semi sweet chocolate pieces, chopped 1 c. finely chopped pecans Beat together butter and sugar until light and fluffy. Dissolve coffee powder in water. Blend coffee and salt into butter mixture. Stir in oats, chocolate pieces and 1/2 cup chopped pecans. Chill about 30 minutes; shape to form 1 inch balls. Roll in remaining pecans. Chill several hours or overnight. Store in refrigerator. Makes about 4 dozen balls. Can be frozen after making. Great for holidays!! |
