QUAIL OR DOVES WITH WILD RICE 
8 quail or doves
1/2 c. butter
2 c. sliced mushrooms (fresh if available)
1/2 c. chopped green onions
1 c. dry white wine
2 tbsp. lemon juice
Salt and pepper to taste
Cooked wild rice

Brown birds in butter, remove and set aside. Saute mushrooms and onions in butter. Place birds, mushrooms and onions in shallow pan and cover with foil. Bake at 350 degrees for 1 hour. The last 15 minutes remove foil. Combine wine, lemon juice, salt and pepper and baste birds often. Serve hot with wild rice.
