SWEET-SOUR GREEN BEANS AND
CARROTS
 
1 c. chopped carrots
1 (9 oz.) pkg. frozen cut green beans
2 slices bacon
1 med. onion, sliced
1 apple, peeled, cored and sliced
2 tbsp. vinegar
1 tbsp. sugar
1/2 tsp. salt

In saucepan, cook chopped carrots, covered in small amount boiling water (salted) until nearly tender (about 10 minutes). Add cut green beans and return to boil. Cover and cook until vegetables are tender, about 5 minutes, drain well. Cook bacon in skillet until crisp, drain, retain 1 tablespoon drippings.

Crumble bacon and set aside. Cook sliced onion in bacon drippings until tender but don't brown. Add sliced apple, vinegar, sugar and salt. Cover and cook until tender (3-4 minutes). Add cooked beans and carrots. Heat; sprinkle bacon on top.
