MUSHROOM SALAD | |
1 lb. fresh mushrooms 1 c. diced celery 1 c. diced green pepper 2 tbsp. finely chopped onion 2 tbsp. salad or olive oil 2 tsp. salt 1/2 tsp. ground black pepper 2 tbsp. lemon juice Rinse, pat dry and slice mushrooms (makes about 5 cups). In a salad bowl place mushrooms, celery, green pepper and onion. Combine remaining ingredients and pour over vegetables; toss gently. Serve immediately. Yield 6 servings. 59 calories per serving. |
