RED BEET CHOCOLATE CAKE 
Cream: 3 eggs

Add: 1 1/2 c. sieved beets (drained 3 tbsp. hot cocoa

Sift together and add: 1/2 tsp. salt 1 tsp. vanilla

Add 1 cup chopped nuts.

Bake at 350 degrees for 20 to 25 minutes. 9 x 13 pan.

Topping:

Cream: Enough powdered sugar to make a fine paste 2 tbsp. beet juice 2 tbsp. cocoa mix

To this add 1 carton Cool Whip.

Spread over cake.
