FROZEN FRUIT COCKTAIL SALAD | |
Drain #2 1/2 can Libby's Fruit cocktail. Soften 2 (3 ounce) packages cream cheese and blend with 1/2 cup mayonnaise and 1 tablespoon grated lemon peel. Stir in fruit cocktail and 2 cups miniature marshmallows. Whip 1 cup heavy cream and 2 tablespoons powdered sugar until stiff. Fold in fruit mixture. Pour into loaf pan lined with waxed paper - freeze until firm or about 4 hours. Unmold and cut into slices. |
