LIMA BEAN BAKE 
4 c. dried lima beans
3 tsp. salt
1/2 c. unsulphured molasses
1/2 c. chili sauce
2 tbsp. vinegar
1/2 tsp. hot sauce
1 tsp. dry mustard
2 med. onions, sliced
2 c. diced cooked ham or luncheon meat

Wash the lima beans and place in a deep kettle. Add the salt and 2 quarts boiling water and cover. Simmer for 2 hours or until tender, adding more water, if necessary. Drain the beans and reserve 1 cup liquid. combine the molasses, chili sauce, vinegar, hot sauce, mustard and reserved lima bean liquid and mix well. Layer the beans, onions and ham in a 3 quart casserole and pour molasses and pour molasses mixture over beans. Bake, uncovered, at 325 degrees for 1 hour and 30 minutes. Beans may be topped with bacon slices before baking, if desired. 12 servings.
