ZUCCHINI APPETIZERS 
1 c. grated Cheddar cheese (sharp)
3 c. thinly sliced zucchini squash (do not peel)
1 c. Bisquick
1/2 c. vegetable oil
1/2 c. chopped onion
4 eggs, slightly beaten
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. oregano
1 tbsp. chopped parsley
1 clove garlic, finely chopped
1/2 c. Parmesan cheese

Mix all ingredients and spread in 13x9 pyrex dish. Bake at 350 degrees for 25 minutes or until browned.
