QUICK ZUCCHINI CAKE 
1 box yellow cake mix
4 eggs
1/2 c. vegetable oil
1 tsp. cinnamon
2 c. unpeeled grated zucchini
1/2 c. raisins
1/2 c. nuts, chopped
1 tsp. vanilla

Beat cake mix, eggs, oil, cinnamon and vanilla together in large bowl for 6-7 minutes. Fold in zucchini, raisins and nuts. Pour into greased and floured 10-inch tube pan. Bake at 350 degrees for 40-50 minutes. Remove cake from pan. Let cool on wire rack. Sprinkle with confectioners sugar if desired. Yield: 16-20 servings.
