12 vanilla wafer cookies 2 c. cream cheese 2 lg. eggs 1/2 c. granulated sugar 2 tsp. vanilla extract Pie filling (opt.) Heat oven to 325 degrees. Line 12 cups of a muffin pan with foil baking cups. Finely crumble 1 cookie into each liner. In food processor or blender, process cream cheese, egg, sugar and vanilla until smooth, scraping down sides once or twice. Pour into muffin cups. Bake 25 to 30 minutes until filling is just set. Cool in pan on wire rack. Remove foil cups from pan and refrigerate until chilled. Top with cherry or blueberry pie filling. Enjoy! |
