FRENCH ONION SOUP 
3 c. thinly sliced onion
2 tbsp. butter
6 c. beef consomme
1/2 tsp. salt
1/2 tsp. pepper
6 slices of French bread
Grated cheese

Melt butter in a heavy 3 quart saucepan. Saute onion slowly, turning frequently, until golden. Add consomme, salt and pepper. Simmer about 15 minutes. Under broiler, toast one side of French bread slices. Spread untoasted side with butter. Cut each slice in half and sprinkle with cheese. Float slices of toast, sprinkle with additional cheese on each dish of soup. Serves 6.
