NEW ORLEANS JAMBALAYA 
1 lb. smoked sausage, sliced in thin slices
1 med. onion, white, chopped
1 lg. bell pepper, chopped
1 tbsp. File' powder
1 tsp. paprika
3 good shakes Tony Chachere's Creole Seasoning
2 tsp. cayenne pepper
1 c. white rice
1/2 c. water
1 can (9 oz.) Hunt's tomatoes chopped with juice

Saute onion, pepper and smoked sausage until tender. Add spices, tomatoes and juice and a cup of rice and a 1/2 cup of water. Bring to a boil. Turn to low, cover and simmer 20 minutes.
