APPLE LOAF 
4 c. grated, peeled apples
2 c. sugar
2 eggs
1 c. oil
3 c. all purpose flour
1/4 tsp. salt
2 tsp. baking soda
1/2 tbsp. cinnamon
1 tbsp. vanilla
1 c. chopped pecans
1 c. raisins

Sprinkle sugar over apples and let stand about 30 minutes. Combine other ingredients except nuts and raisins. Blend well; add apple mixture. Add nuts and raisins. Bake in two loaf pans at 350 degrees for 15 minutes, cut oven back to slow and bake until cake springs back when touched.
