CHICKEN ZUCCHINI 
2 lb. zucchini, cut into 1/4 inch cubes (6-7 c.)
1/4 c. chopped onion
1 med. green pepper, chopped
1 (10 3/4 oz.) can cream chicken soup
2 c. diced, cooked chicken
1/4 tsp. pepper
3/4 c. butter
1 (6 oz.) pkg. chicken flavored stuffing mix

Combine zucchini, onion, and green pepper in 3 quart casserole. Cook, covered, on full power for 13-16 minutes or until vegetables are crisp-tender. Add soup, chicken, and pepper to vegetables. Set aside.

Place butter in 2 quart utility dish. Cook on full power for 1-2 minutes, or until melted. Add seasonings and bread crumbs from stuffing mix to butter. Mix well. Reserve 1 cup stuffing mixture for topping. Spread remaining mixture over bottom of utility dish.

Spoon zucchini mixture over stuffing. Sprinkle reserved topping evenly over top. Heat on full power for 7-10 minutes, or until heated through.

This recipe is for microwave oven. (Use own judgment for conventional oven.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
