Pancake mix or for the heart smart
2 eggs
1 tsp. sea salt
2 tsp. low sodium baking powder
2 1/4 c. oat flour
2-3 c. buttermilk
1 sm. can crushed pineapple

Blend dry ingredients separately. Blend liquid (wet) ingredients separately. Blend together with beater. Add more milk according to consistency desired. Pour on griddle in shapes and letters of your children's names to the delight of all. Ask the children to help. Mine do and it is lots of fun.
